Happy St. Patrick’s Day! I told you I would make a second post about Irish Soda Bread! This recipe is slightly different from the first one, and is very delicious.
I used to not like the recipe with out raisins until we found this recipe. It turned out beautiful! And it has a slight sweetness to it, even though it has no raisins or caraway seeds.
Amazingly Easy Irish Soda Bread
This recipe – as the name implies, is AMAZINGLY easy. I didn’t want to spend all day making bread and this one was the fastest bread recipe I have ever made!

Preheat oven to 375 degrees F (190 degrees C). Lightly grease a large baking sheet.
In a large bowl, mix together flour, sugar, baking soda, baking powder, salt and margarine.
Small note: I do not use margarine, so I substituted with sweet butter and it worked fine.
Stir in 1 cup of buttermilk and egg.
Turn dough out onto a lightly floured surface and knead slightly. Form dough into a round and place on prepared baking sheet.
I thought I was making this bread wrong because the dough I usually make tends to be more wet but this turned out great – probably from the next steps I took.
In a small bowl, combine melted butter with 1/4 cup buttermilk; brush loaf with this mixture. Use a sharp knife to cut an ‘X’ into the top of the loaf.
Bake in preheated oven until a toothpick inserted into the center of the loaf comes out clean, 45 to 50 minutes. Check for doneness after 30 minutes. You may continue to brush the loaf with the butter mixture while it bakes.
I followed the instructions to brush the load with the butter mix mid way through baking twice- and the bread turned out great. I also felt I needed to do this so I was not wasting all of that butter and buttermilk :0)
